RAW FOOD PRODUCTS

 

Over the years Jeremy and the crew of Loving Foods have innovated and created some of the most fantastic and inspirational ideas in the raw food movement. Many of these great ideas manifested in the form of recipes. When the restaurant closed Jeremy sold some of these recipes, which you might recognize today as:

 

Essence Bread- One of the first raw food recipes I ever learned was Essene Bread. My friend Jai used to make it in NYC using his oven on low left open. Later when I moved to Woodstock I began to make my own breads. Eventually on Maui I refined my technique for both outdoor solar drying and indoor dehydration. I eventually developed what I call essence bread, rather than essene bread and that’s what I make to this day.

 

Carob-Hazelnut Torte – This is a delicious dessert that I had created during my team up with Juliano on my way across the country.

 

Palm to Mouth Coconut Chips-Durring the high point of the Raw Experience we were going thru 1000 coconuts a month at the minimum. We sold mostly the water and had more spoon meat then we knew what to do with. I experimented and loving simplicity I ground up coconut meat in the champion and added salt and spread it on dehydrator sheets and dried it. It dried fabulously and I cut and scored it into chips, dried it a bit more and we used them in the restaurant at first and later packaged them for sale.

 

Rawmesean –when we first opened the restaurant we had a healthy harvest of macadamia nuts and at the time were using nutritional yeast (which may be live though its certainly not raw) I later evolved this recipe to use pine nuts since they were more available on a large scale. Eventually I sold the rights to this recipe to Govindas / Gopals and they currently distribute it.

 

Powerwraps / Sea Stix/ Snacky Snakes-After the closing of the Raw Experience, I was living in Huelo on Maui and teaching workshops with Annie Jubb. I would often hire Suzie Bohannon and Greg Brixe to work at the retreats and help do general prep for festivals and events. Suzie had been helping develop a snack made from a nori sheet and nut or seed spread. Due to the fact that we could only fit a few of them I suggested rolling them up like cigars. We cut up the nori and used a pastry bag to draw the line down the strip and that’s how the Sea Stix, were invented. Our young friend Sage had quite the fondness for them and called them snacky snakes. Eventually I sold the rights to Govindas /Gopals and they renamed them Powerwraps.

 

Bucky Bars- I had developed a buckwheat-based cereal and was often selling it to friends and working on marketing it to Govindas. I sometimes would hire friends to make the buckies and one time I was away and asked a friend to make them. She accidentally added too much flax and woops Deja , while in my employ, discovered the Buckybar. I began to work with the bar concept and continued the development for a year until I had a variety of flavors. I did manage to sell it to Govindas but they closed before it was released to the public market.
