This story begins in New York city like many a great tale. I was mystified by many a great teaching and NYC offered plenty of oportunity to learn. One of the many paths I follewed led me to study health and nutrition. I entered into a deep study of balancing and rejuvenating health from nature. I studied herbology, chinese medicine, aruvedic arts, internal chi kung, massage, gem therapy, alchemy and FOOD. I began to see that food had an overwhelming effect upon every healing art. Many forms of natural health relied directly on the plant kingdom. As my yogic studies deepend I began to evolve my vegetarianism into being vegan and eventually to being raw. Many great teachers and trail blazers along the way help me construct and develop my understanding of raw and living foods. As I began to discover a new world of nature, abundant with life giving sustanance. I began to explore the world of exotic foods and and fabulous raw food recipes when I traveled to Maui Hawaii and to Puerto Rico. Upon returning from my trip, where I had picked up a new skill of raw fruit pie making that was passed down thru the ages by the sages of divine cuisine.
I decided to start a new venture in life and moved to Woodstock NY. There I began to write The Raw Truth and started a company called Loving Foods and with the help of some friends started selling pies to the local stores and to some local raw food customers. As Loving Foods we began to pick up clientelle for private catering. I travelled once again to Maui and was teaching chi kung and kung fu at the anual spring renewal gathering. At the camp they provide excellent yet cooked food and I was always off on the side eating my own raw meals that i prepared myself. One day a member of one of the groups attending asked what I was eating and I offered him a sample. He immediatley asked me if i wanted to do a private dinner for him and his friends after the camp. I agreed and later that week impressed them with fantastic and creative dishes. One of the people in that group connected me with a huge job in Maine for 100 people for 10 days. I quickly assembled a team of ace superchefs and we put on a powerful show. We made some incredible recipes and showed that many hands make light work. Soon after words i recived a call from the person running the big retreat center on Maui offering me a great job designing a kitchen and working as the head chef.
Soon the popularity of the fantastic food I was creating at Mana'Lea Gardens became well known. I had taken on my girlfriend Renee as my partner and assistant chef and we began taking catering jobs continuing the Loving Foods Fine Raw Catering in Maui. Our food was a hit and the catering gigs kept coming. At one point people were sneaking through the woods into Mana Lea to get a taste of our food when the workshops were happeining. One night the manager of the place came to me and said so many people were coming back just for the food. He suggested that i should have a restaurant and the next day I left the center to pursue broader ventures.
Renee and I began to muster up all the money we could in order to open the Loving Foods Raw Experience an exploration in living cusine. It was planned to be a cross between healthy fine dining and an educational jungle fruit musem. Instead we created something far greater, a community and a conciousness. The Raw Experience Maui was underfunded and what we lacked in cash we made up for in faith, friendship, and fruiting. Many days began with me and some of the crew gathering fruit in the jungle or trading meals at the restaurant for the fruit in peoples yards just to make food each day. After the first year we had show we were there to stay and many of the local stores leant a hand in order to help us keep afloat. Soon business flocked too us we got great press write ups and developed a steady string of fans who kept coming back for more. The first eddition of the Raw Truth was released and things were looking great. We had developed a new cuisine a fusion of exotic ingredients with healthy ideals and a ethnic flare. I began teaching classes and developing incredible recipes.
The word needed to be spread and so I began to teach abroad as well as in Maui. NY, LA, AZ, OK i crossed the globe 10 times in a year and the restaurant was finally triving on its own. Renee had evolved as a chef and many of the one time "angels" had grown into full on employees and were gaining skills as chefs and creating recipes of thier own. The idea came up to do a workshop and we put together a great experience. The Raw Retreat Maui was a huge success and people loved it we brought in our friends who were just starting out in the raw food world david wolfe and old school advocates like lenny watson. We brought the best chefs from the Raw Experience and the food, the education, the outdoor adventures it was a potent week. Everyone wanted more and I begand to develop more concice teaching plans and a uniqe and fun way of educating people and helping them help themselves.
At the same time Loving Foods had aquired the ownership of a restaurant called RAW that I had consulted on years before. The owner sold us the place which at the time was far in debt and far from raw so I quickly brought in some of my Maui team and transformed the place into a citified version of the Raw Experience. People Loved it and we got more write ups and rave reviews word was spreading fast. I was asked to consult on a number of cafes across the US. Vegas, LA, New York there was a huge demand for healthy delicious raw food everywhere.We offered health workshops all over the globe and shared the teaching and the recipes. I helped many friends and clients open their doors and spread the word and the food. Each nexus had its own unique way of expressing itself and offering the miracle of live food to the public.
The wheel keeps on turning and Loving Foods continues to bring living food information to the forefront of the scene. From inventing products like the power wraps or the buckybar to writing books and providing educational materials and even now with edutainment games and infomedia websites. We have sought out exotic foods from around the globe and shared them with the people who seek to explore the realm of taste and health. Loving Foods is here to help and to educate.
